I have marble tile countertops,what happens if i dont seal it? - tile countertops

The tiles are black was the word, but we have much more choice than we do not count. I sell a counter with the recommened Lowes sealants and her Chihuahua. So, now I want to stamp out the rest. Is it safe for us to make sandwiches or cook? Thanks Teresa
